• SM: Is it possible to enjoy our Latin food without gaining weight?
“Many of the ingredients of the delicious Latin dishes are not very favorable for our figure. The holidays are a season of indulgence, but it is important to pay attention to what we eat and the size of the portions. Instead of giving up on mom's cooking, serve yourself less of your favorite dishes. Avoid sugary drinks, which certainly taste good but have tons of calories. Finally, wait at least 20 minutes after dinner before moving on to desserts, that way you will give the food time to 'settle' and avoid overeating,”explains chef LaLa.
• SM: What message do you have for our readers regarding eating habits?
“One of the biggest health-related mistakes is frying in lard. I recommend replacing fatty red meats with lean meats like chicken or turkey, which have fewer calories and less saturated fat. To sauté the meat, it is better to use olive oil and add aromatic herbs. We should eat three to four hours before going to bed, or go for a walk after dinner to allow time for digestion. Drinking a lot of water during the day also helps to digest food better, "she recommends.
• SM: What ideas would you give us to substitute heavy ingredients, such as those that cause heartburn?
“ As a certified chef and nutritionist, I always advise people to be aware of how food affects them. Many of the ingredients in traditional Latin dishes cause heartburn, but the culprit foods may be different for each person. I generally recommend avoiding tomatoes, onions, garlic, chili, and using natural flavors such as herbs for flavoring your food. Instead of chili or tomato sauces, you can use fruit or guacamole sauces. For homemade moles, you can use Pipián sauce instead of chocolate and chili sauce, "advises the famous chef.
